Soda Pop Cake

I heard somewhere (probably on Pinterest...) that it's possible to make a cake with soda. I was rather dubious. How is it possible that it needs only two ingredients?? That doesn't even make sense. Right? Right?? Wrong. It somehow makes perfect, moist, fantastically delicious sense! I made it. I'm a terrible influence on my husband, I know.

Seriously, this was so easy, I think I might have to make something else or I'll be bored all day!

Soda Pop Cake

1 (12 ounce) can soda, any flavor
1 cake mix, any flavor

Did I forget anything? No... It really is just those two. Seriously!

I had a 6-pack of San Pellegrino Orange and a yellow cake mix begging me to be used. I'm sure other combos would have been delicious, too. Can you picture it? Strawberry cake with Sierra Mist (they have it now in strawberry kiwi!), lemon with Fanta, chocolate with Dr. Pepper? The possibilities are endless, and they're sure to be a hit anytime you make them!

Preheat your oven to 350 degrees. Grease just the bottom of a 9 by 13 cake pan.

Pour the cake mix into a bowl.

Add the soda. It's gonna fizz, so be careful!

Use a whisk or a spoon to stir it all up. The batter is gonna be pretty thick.

Pour the batter into the pan.

Bake it for about 25 minutes, and then insert a toothpick in the center to check for done-ness.

Let that baby cool before you frost it, then have at it!

Now enjoy! Told you it was easy!

Cereal Muffins

I love raisin bran. Like, seriously. When I was a kid, this was my only favorite "grown-up" cereal. Sometimes, I even picked raisin bran over the sugary stuff. (I was kind of a weird kid.) And now, my favorite cereal just got even better, even more grown up! As a muffin! Heck yeah!

Raisin Bran Muffins

1/4 cup vegetable oil, plus more for the tin (optional if you use muffin liners)
1 1/2 cups raisin bran cereal
3/4 cup milk
1/2 cup whole-wheat flour
1/2 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 large egg, lightly beaten
1/4 cup packed dark-brown sugar

I doubled the recipe to account for all of Sam's coworkers, but you don't have to do that. (I just wanted one or five to myself, alright??)

Start out by preheating the oven to 400 degrees.

Lightly oil a standard muffin tin, or use some cute paper liners. I should probably get some of those. Mine are just plain old white.

In a medium bowl, combine cereal and milk.

Let that stand until it's nice and soft, which is about 5 minutes. Mmmm... raisin bran...

In a small bowl, whisk together your flours, baking powder, cinnamon, and salt. Now, I didn't have any whole wheat flour, so before substituting, I did some research. Whole wheat flour makes for great bread, as the consistency of things baked with it tend to be on the denser side. I'm not a big fan of dense muffins, so I figured I'd be okay just doing all-purpose. It seemed to work out alright!

Stir the oil, egg, and sugar into cereal mixture.

Fold in the flour mix.

Divide the batter among your muffin cups.

Bake until a toothpick inserted in the center of a muffin comes out clean, about 20 to 25 minutes.

Let them cool (a little while) before you chow down. Then have at them!

Let me tell you a little story about these muffins. Raisins are Sam's nemesis. You might even say they are his kryptonite. So the very idea of raisin bran makes him turn up his nose in disgust. But! I made him taste-test these muffins, and miracle of miracles! He went back for seconds! Gasp! That's how good they were! So go make them! Right now!
